METHOD:
1. Cut lengthways the bitter melon, deseed and thinly slice. Capsicum diced.
2. In a mixing bowl, beat eggs with a pinch of salt, sugar and black pepper (to taste). Then add in melon and capsicum and mix well.
3. Oil in pan, stir fry garlic until fragrant. Then pour in the melon, egg mixture and fry until slightly brown.
4. Serve hot with steamed rice.
You can use chili pepper instead of capsicum if prefer a bit hot for the dish.
For vegetarian, use tofu instead of eggs.
