1/ Marinate fish slices with minced shallots, 3 bruised cloves of garlic, fish sauce, sugar, pepper and caramel in a clay pot. Leave the mixture to be absorbed themself in half an hour.
2/ Heat a skillet and add into 2 tablespoons of oil. Wait to see the oil hot enough, quickly drop 3 cloves of garlics. Add pork side and stir-fry them quickly.
3/ Add pork, sliced shallots to the clay pot. Slightly mix them with fish. Add 0.5 cup of water and cook over low heat to make the liquid inside become viscid. Top it off by chilies.
4/ Sprinkle your meal with some scallion sprigs and pepper. Remove them from the heat and let them cool off or serve hot as a main course with rice.
