1/ Pork : wash and mince, add sugar, salt, fish sauce, cooking oil and mix by chopsticks
2/Dried black fungus ( wood ear ) : soak into water for 5 minutes, then cut out the stems and slice the caps into thin strips
3/ Red shallot : peel and chop
4/ Mix the minced pork with wood ear and red shallots for 15 minutes
5/ Cabbage : use a knife to take out 12 cabbage leaves carefully , remove tongs from the leaves , wash with 1 tablespoon salt and drain
Heat the a pan of water to the boil , put the cabbage leaves into the boiling water for 2 minute, then put them into a bowl with a iced cubes ( keep the leaves green)
6/ Use the cabbage leaf to roll with the pork mixture like fold as an envelope, repeat the remaining pork mixture
7/ Steam the rolls in a steamer for 20 minutes
Place the rolls on the dish , cut into 2 parts
Serve warm with tomato dipping sauce .
