1/ Bring chicken to a boil in an opened-lid pot for half an hour. Debone and shred chicken meat into thin strips.
2/ Soak white and purple cabbage in water with 4 teaspoons of salt. Drain them off after a quarter of hour.
3/ Add the mixture of lime juice, salt, minced jalapeno pepper and sugar in a bowl.
4/ Mix chicken meats with cabbage, shallots, prepared dressing, Vietnamese coriander and shredded jalapeno peppers. Season thme with salt and sugar to enhance the flavor.
5/ Transfer all ingredients onto a dish. Sprinkle them with browned shallots and roasted peanuts to garnish your meal.
6/ Served with shrimp crackers and dipping sauce of pepper and lime juice.
