Vietnamese Recipes – Chicken Salad – Ga Xe Phay

Ingredients:

Chicken pullet
1.5 Kilograms
Onion
250 Grams
Peeled
Banana inflorescence (Hoa chuoi)
500 Grams
Lemon
50 Grams
Liquid lard
20 Grams
Smartweed ( Rau ram)
50 Grams
Chili
10 Grams
Cut into thin, long strips
Sugar
30 Grams
Ground pepper
Vinegar
Fish sauce
Seasonings
Salt and MSG
Dried shallots

Preparation mode:

1/ Slice onion lengthwise, soak in vinegar mixed with sugar for 30 minutes. Soak sliced banana inflorescence in water mixed with salt and vinegar; wash and drain. Wash and cut smartweed into pieces, fry some shallot in boiling fat.

2/ Wash chicken well before boiling in water; when the chicken is done to a turn, remove from the heat and set aside, wait for them to be cooler. Shred boneless chicken; add pepper and salt, smartweed, shallot, vinegar, sugar, banana inflorescence, chili, fish sauce, seasoning, lemon juice and blend well.

3/ Sprinkle a ddish of chicken salad with liquid lard and fried shallot. Serve cool.
