1/ Wash and mince pork shoulder
2/ Soak mushroom in a small bowl of water with 1 teaspoon salt, drained , divide 2 parts (slice 1/2 and chop ½)
3/ Wash and finely chop spring onion and coriander ( divide 2 parts )
4/ Combine all with uncooked pork paste , pork, mushroom, 1 teaspoon seasoning, 1 teaspoon vegetable oil for 10 minutes
5/ Shape the mixture into meatballs
6/ Put the meat balls in a wok and steam them for 10 minutes
HOW TO COOK
1/ Heat 500 ml water in a large pan over medium heat to the boil and add the meatballs , 1 teaspoon seasoning, 1/2 teaspoon salt and 1 teaspoon fish sauce and cook for 8 – 10 minutes.
2/Taste to check the seasoning and add more if necessary then add the mushroom and cook to boil then remove the heat.
3/ Place five meatballs in a bowl . Top with spring onion, coriander and pepper .
· pork paste ( ask the butcher to put the pork through the mincer twice)
