1. Soak the mushrooms and cellophane noodles for 15 minutes in cool water and drain, squeeze any excess water then cut into 2-3cm lengths
2. Lightly whisk the eggs in a large bowl ( keep 1 tablespoon of egg for decoration over the surface ) then add pork, mushroom, onion, garlic, noodle, salt and sugar then combine well .
3. Place the bowl in a pan over boiling water , cook for 20 minutes or until the eggs have set
4. Using a spoon to add the remaining egg on the surface and add the salted duck egg on the top . Then put the bowl into the microwave for 2-3 minutes or continue to steam in the pan .
Serve with steamed rice and dipping sauce , cucumber, tomato
