Vietnamese Recipes – Taro and Fried Cake (Southern Style-Soc Trang, Ca Mau) – Banh Cong (Mon An Nam Bo-Soc Trang, Ca Mau)
1/ How to make the batter: Add all ingredients into a mixture: rice flour, all-purpose flour, coconut milk, salt and sugar and a cup of fresh water. Stir them well and wait to let them stay still for half an hour.
2/ Add salt and pepper into your shrimps to ramp up its flavor. Season the porks with some peppers, garlic, shallots, salt, sugar and chicken stocks. Bring soaked mung beans to a boil and steam them for 15-20 minutes until they are completely softer. Add some cooking oil into your minced pork and stir-fry them for a short while.
3/ Pour cooking oil into a small pot, up to 5-6 cm level. Quickly dip your mold into cooking oil, which is over a medium heat. Batter comes first, then mung beans and minced pork come later. Add more batter and put shrimps on top. Slowly submerge your mold into cooking oil. Hold them at the surface for a very short moment of 15 seconds before lower them down into the liquid. This small trick would help the batter not to spill all over the place. Fry them all until you see golden color. At that stage, you can put them freely onto the boiling oil.
4/ Shred carrots and daikins before putting them onto a small plate. Add more sugar and 3/2 tablespoons of vinegar to toss them up. You can add cucumbers, corianders and tomatoes as your additional garnishing.
