1.Water spinach : Wash and clean out leaves picked spinach, cut into 4-5 cm lengths
2.The pickling liquid :Heat the vinegar, sugar and salt in a small saucepan until the sugar has completely dissolved. Leave to cool until lukewarm.
HOW TO MAKE
1.Gently heat the water in a small saucepan. Put the water spinach in boiling water for wilted but still keep green vegetables.
2.Then, soak spinach in ice water to vegetables were crunchy.
3.Pour the cooled pickling liquid over the water spinach, add the chilli and garlic and leave to steep for 24 hours before use in an airtight container.
Serve with rice as condiments
